Each figure is the average over a whole month, published weeks or months after the month ends. It shows the trend, not the price on any one day, and it is never a live price.
What it is
Sugar comes from sugar cane (grown in Brazil, India and Thailand) and sugar beet (grown in Europe). This is the world price of raw sugar as published under the International Sugar Agreement.
The units
US dollars per kilo of raw sugar.
What moves the price
Harvests in Brazil and India, weather, how much cane Brazil turns into ethanol fuel instead of sugar (which depends on oil prices), export rules in India, and the Brazilian real.
Why it matters for everyday prices
Sugar is in soft drinks, sweets, bakery products and many processed foods. The EU has its own market with different prices, so world prices reach European shelves only partly.
